Lemon Garlic Tilapia

Ingredients

4 tilapia fillets
2.5 tablespoons fresh lemon juice  
4 tablespoon butter, melted
3 clove garlic, finely chopped
1 teaspoon dried parsley flakes
salt & pepper to taste


Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
  2. Rinse tilapia fillets under cool water, and pat dry with paper towels.
  3. While doing this, sautee butter, garlic, parsley, and lemon juice. 
  4. Place fillets in baking dish. Sprinkle salt and pepper; Add 2-3 tsp of buttered bread crumbs and parmesan cheese.
  5. Pour lemon juice mix over fillets.
  6. Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 10 minutes.
***Make sure you have less lemon juice than butter!

Helpful Hints - May 17th

1) Fresh lemon juice will remove onion scent from hands.


2) To save money, pour all leftover vegetables and water in which they are cooked into a freezer container. When full, add tomato juice and seasoning to create a "free" soup. 


3) Three large stalks of celery, chopped and added to about two cups of beans (navy, brown, pinto, etc) will make them easier to digest. 


4) When cooking vegetables that grow above ground (Broccoli, cauliflower, brussel sprouts, asparagus, spinach, lettuce, cabbage, various greens, celery), the rule of thumb is to boil them without a cover. (Vegetables that grow underground - Potatoes, carrots, parsnips, beets, radishes, turnips, onions, garlic).


5) A lump of sugar added to water when cooking greens helps vegetables retain their fresh color. 

Homemade Nepali Momos and Achar


Momo Meat
Ingredients:
 -Turkey meat  - 4 cloves of garlic  - 2 Tablespoon of ginger and garlic (each)  - Salt and Pepper

- 1.5 tsp. cumin powder
- 0.5 tsp. turmeric yellow powder
- 0.5 tsp. chicken marsala 
- onion powder

1) Mix all the spices, garlic, and ginger with the meat.
2) Put a good portion in each dumpling dough and pleat.

Achar
Ingredients:
- 2 tomatoes cut up in quarters
- Cilantro
- Salt, pepper, cumin, turmeric, chili pepper

1) Heat tomatoes and cilantro in a sauce pan (low heat) for about 15 minutes or till juicy.
2) Blend together all of the spices with tomato and cilantro.
3) If thick, add water.
