Mango Lassi


Mango Lassi Recipe


INGREDIENTS

  • 1 cup plain yogurt
  • 1/2 cup milk
  • 1 cup chopped mango (peeled and stone removed)

METHOD

Put mango, yogurt, milk, sugar and cardamom into a blender and blend for 2 minutes, then pour into individual glasses, and serve. Can sprinkle with a little cardamom.
The lassi can be kept refrigerated for up to 24 hours.
Yield: Makes about 2 cups.

Chocolate Chip Cookies

Here is the converted recipe, 
2 Sticks Butter (8oz 
3 Cups Bread Flour (12 oz (I judged my consistency and used 1/2 cup less, make sure you are not packing your flour also 
1 tsp Kosher Salt 
1 tsp soda (3/4 tsp for high altitude (I'm at 6,000 ft, reduce more if you are higher 
1/4 cup sugar (2oz 
1 cup light brown sugar (8 oz 
1 egg 
1 egg yolk 
1 ounce whole milk 
1 1/2 tsp vanilla (I used 1 Tbsp 
12 ounces choc chips 

The key is to bake them until they are BARELY done looking. My first two pans I overbaked, when they cooled they were not chewy and I was disappointed. I found that 7 1/2 - 8 minutes was perfect! They should not look brown at ALL. Don't worry they will not be raw at all.

Spinach Stuffed Mushrooms

10 Mushrooms (stems cut up afterwards)
0.5 tbsp butter
1 clove garlic
1/4 pack spinach (?)
Shredded mozarella/parmesan cheese
feta cheese

Perfect Sweet Tea Recipe

1) In a saucepan filled with 1.5 cups of water, add half cup of sugar.
2) Set over high heat and bring to a boil, stirring to dissolve the sugar.
3) Remove from heat. Add the tea bag and let steep for about 5 minutes.
4) Pour the mixture into a pitcher with 6.5 cups of water and stir to combine.
5) Refrigerate and serve in iced-filled glasses!

**Can double recipe if you have a one gallon pitcher! It turned out just perfect! Sweet and refreshing and light!

Bread Pudding


Ingredients

  • 6 slices day-old bread
  • 2 tablespoons butter, melted
  • 1/2 cup raisins (optional)
  • 4 eggs, beaten
  • 2 cups milk
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

  • Directions
  1. Preheat oven to 350 degrees F.
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
**I also caramelized banana separately and added to the finished pudding and served it with vanilla ice cream!

Spinach Mushroom Pasta

Ingredients

  • 2 Boneless Chicken breasts ( sliced)
  • 2 Cups Whole button mushrooms
  • 2 Large handfuls of spinach
  • 1/4 Cup Orange Juice
  • 2 Tbsp. Olive Oil
  • 2 Tbsp. Balsamic Vinegar
  • Parmesan Cheese
  • 2 Cups Whole Wheat Penne Pasta

Method

  1. Preheat oven to 400 degrees
  2. Cook pasta according to directions
  3. Line baking sheet with parchment paper and arrange mushrooms on sheet
  4. Coat with one tablespoon of olive oil, balsamic vinegar and some Parmesan cheese; toss to coat even
  5. Roast for 20 minutes turning occasionally
  6. In a saute pan, turn to medium heat and begin to cook the chicken with the remaining tablespoon of oil.  Once the chicken begins to brown toss in the roasted mushrooms, orange juice, remaining balsamic and let reduce for 4 minutes
  7. Add spinach and cook until spinach is wilted
  8. Add noodles, mix thoroughly and dress with a sprinkle of Parmesan cheese.
Zesty Tip: For me this tip is all about balance.  Use the balsamic and orange juice to balance themselves but be sure you have enough sauce.  This was my only mistake in this dish.  I feel it would have been even better with more sauce.

Garlic Lemon Shrimp and Green Beans Recipe

Ingredients


  • ~40 peeled shrimp defrosted
  • 4-5 garlic cloves minced
  • 1/3 cup fresh parsley
  • 3 tbs. lemon juice (caps)
  • 1 teaspoon of salt
  • olive oil
  • parmesan cheese to season
  • bread crumbs
  • french string beans cooked
  • peanuts, if desired
1) In a zip lock bag, add shrimp, parsley, garlic, lemon juice, salt, parmesan cheese, and bread crumbs.
2) Shake to mix and then refrigerate for about 30 minutes.
3) Put the string bean in boiling water and cook. 
4) Sautee in olive oil for about 6 minutes, until shrimp color changes to light pink.
5) Add the cooked string beans to the mixture and mix for about 5 more minutes.
6) Add crushed peanuts if desired!
7) Serve while hot over rice.

Honey Baked Chicken


Ingredients:
3 or 4 pounds chicken, cut up
1/2 cup margarine, melted
1/2 cup honey
1 teaspoon salt
1/4 cup prep. mustard
1 teaspoon curry

Directions:
  1. Mix margarine, honey, salt, mustard and curry.
  2. Pour over chicken. Bake at 350 degrees for 1 1/4 hours. Basting every 15 minutes.

Orange Chicken (Simple)


Preparation time: 5 minutes      Total time: 25 mins
Serving: 2 


Ingredients: 
4 chicken breast halves
1/4 cup flour
Salt and pepper
4 tablespoon margarine
1 1/2 cup orange juice

Directions:
  1. Coat each half breast with seasoned flour.
  2. Melt margarine in pan and saute each side over medium heat until lightly browned. Add orange juice and cover.
  3. Cook about 15 to 20 minutes more on reduced heat until done.
  4. Serve over rice, if desired, with the sauce.

NOTE: It turned out pretty good and very easy to make. When I don't feel like preparing anything for too long, I will definitely make this again. The sauce did not turn out like the one displayed in the picture and it was not enough, so maybe I will put more orange juice next time.

Honey-Orange Chicken Recipe

Ingredients
  • 3/4 cup honey
  • 3/4 cup orange juice
  • 4 1/2-6 garlic cloves, minced
  • 3/4 teaspoon crushed red pepper flakes, adjust to taste
  • boneless skinless chicken breasts
  • 1/2 cup flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • tablespoons butter or tablespoons margarine
  • 1 1/2 teaspoons vegetable oil
  • 4 1/2 tablespoons fresh parsley, chopped


Directions:

    1. In small bowl, combine honey with juice concentrate, orange zest, garlic, and the red pepper flakes. Set aside.
  1. Pound chicken to approximately 1/4 " thickness. Cut into bite size pieces.
  2. In a plastic bag mix together the flour, garlic powder, salt and pepper. Toss chicken pieces to lightly coat with flour mixture.
  3. In a large non-stick skillet, heat butter and oil over medium-high heat. Add chicken and stirfry until just cooked through.
  4. Pour honey mixture over chicken and cook, stirring to coat all chicken pieces with spicy honey-orange glaze. Sprinkle with parsley and green onion.
  5. As stated above, you can leave the chicken breasts whole. Pour the glaze over chicken that has been cooked through, turning chicken to coat as sauce begins to thicken, about 2 minutes. Serve chicken breasts with honey-orange glaze spooned over the top. Garnish with parsley and green onions.

Note: I thought this recipe was very good. I added more red pepper flakes to make it spicier and overall it tasted like orange chicken from chinese food. Next time, though I would marinate the chicken first before just glazing the sauce.

Savory Apple Dish

Ingredients


  • 4-6 pieces of chicken ( legs, wings, thighs or breast )
  • 2 Medium apples, peeled and sliced
  • 1/2 Tsp. Nutmeg
  • Cilantro for garnish
  • 2 cloves of garlic, minced
  • 1 Tbsp. Mustard
  • 1 Tbsp. Brown sugar
  • 6 medium potatoes, peeled and thinly sliced
  • 4 Tbsp. butter
  • 3 Tbsp.flour
  • 1 Tsp. salt
  • 1/4 Tsp. pepper
  • 2 1/2 cups milk
  • 1 small onion, finely chopped

Method

  1. Preheat oven to 350ºF.
  2. For the chicken, in a preheated pan begin to sear chicken on all sides and once golden brown, set aside.
  3. In a bowl combine garlic,nutmeg, mustard and brown sugar and mix together to make a paste.
  4. Smear the paste over the chicken and set aside.
  5. For the potatoes, heat 3 tablespoons of butter in a saucepan over low heat until melted. Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk, 1/2 cup at a time.
  6. Heat to boiling. Boil and stir 1 minute.
  7. Arrange potatoes and apples in greased 3 quart casserole in 3 layers, topping each layer with part of the chopped onions and 1/3 of the sauce. Add the chicken pieces through out the casserole dish as well.
  8. Dot the top with the remaining 1 tablespoon of butter, broken into little pieces.
  9. Cover and bake until potatoes are tender, about 60-70 minutes.
  10. Let stand 5 to 10 minute before serving.
  11. ENJOY!
Zesty Tip: Add 1/2 to 3/4 cup grated cheddar cheese to the sauce and mix to melt. Sprinkle bread crumbs on the top if the potato mixture before baking and bake as above. Easy au gratin potatoes!

Eggplant Parmesan

Ingredients
  • 3 eggplant, peeled and thinly sliced
  • 2 eggs, beaten
  • 4 cups Italian seasoned bread crumbs
  • 6 cups spaghetti sauce, divided
  • 1 (16 ounce) package mozzarella cheese, shredded and divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1/2 teaspoon dried basil/parsley

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sweat the 1/4" slices by sprinkling with sea salt and letting sit for 30 min. Rinse, pat dry w/paper towel (get good & dry).
  3. Dip eggplant slices in egg, then in bread crumbs and parmesan. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
  4. Place on baking sheet coated with PAM then bake for 7 min at 450, flip and bake add'l 7 mins depending on how crisp you like it.
  5. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
  6. Bake in preheated oven for 55 minutes, or until golden brown.

Helpful Hints - May 24th

The key to good scrambled eggs is to whisk and blend in the beginning in a bowl with cheese, milk, and seasoning.



Best Tuna Melt

Ingredients
2 (6 ounce) cans solid white tuna in water, drained
1/4 cup mayonnaise
1/4 cup finely chopped celery
1 1/2 tablespoons finely chopped onion
1 tablespoon chopped parsley
3/4 teaspoon red wine vinegar
1 pinch salt
1 pinch freshly ground black pepper
4 slices bread
8 slices ripe tomato
8 slices Swiss cheese/Cheddar cheese
paprika, for garnish


Directions
  1. Preheat the oven broiler.
  2. In a bowl, mix the tuna, mayonnaise, celery, onion, parsley, and vinegar. Season with salt and pepper.
  3. Place the rye bread slices on a baking sheet, and broil 1 minute in the preheated oven, until lightly toasted. Remove from heat, and spread with the tuna salad. Place 1 cheese slice over the tuna salad on each piece of bread, layer with a tomato slice, and top with remaining cheese slices.
  4. Return layered bread to the preheated oven, and broil 3 to 5 minutes, until cheese is melted.
NOTE:  It was very easy to make and turned out delicious!
